Baked Fruit with Raspberry Sorbet

Ingredients
  • 500 gm Frozen Mixed Berries
  • 2 pieces Bananas (Cut into 2cm Cubes)
  • 10 pieces Stone Fruits (Apricots, Plums, Peaches & Nectarines)
  • (Cut into 2cm Cubes)
  • 1 bunch Sultana Grapes
  • 3-4 pieces Citrus Fruit (Oranges, Blood Oranges & Mandarins)
  • (Cut into 2cm Cubes)
  • 50-100 gm Cherries (Stone taken out)
  • 2 pieces Kiwi Fruit (Cut into 2cm Cubes)
  • 2 pieces Apples (Cut into 2cm Cubes)
  • 1-2 pieces Orange’s (Freshly Squeezed)
  • 2 Vanilla pod (Seeded)
  • 150 gm Caster Sugar
  • 50 ml Orange Liqueur (Cointreau & Grand Marnier)
Directions
  • Step 1 In a bowl mix together, the caster sugar, freshly squeezed orange juice, vanilla pod seeds & orange liqueur.
  • Step 2 In a large baking dish add all the fruit, mixed together thoroughly.
  • Step 3 Add the sugar liqueur mixture and mix thoroughly.
  • Step 4 Let it sit in the fridge for 3-4 hours, so all the juices and flavors blend together.
  • Step 5 Covered the dish with foil and put into a preheated oven of 150 – 160°C for 10 minutes.
  • Step 6 Take out of oven and take off the foil, put back in the oven for a further 10/15 minutes or until cooked.
