Cherry Tomato Bruschetta with ricotta cheese

A great party dish, easy to make or can be used as a tasty lunch alternative.

Ingredients
  • 400 g cherry tomato on a vine
  • 1 garlic clove sliced
  • 1 tsp cracked black pepper
  • 2 tsp sea salt
  • 1 tbsp extra virgin olive oil
  • For topping:
  • 400g fresh ricotta
  • 1 tbsp extra virgin olive oil
  • 1 tbsp finely cut basil
  • 1 loaf of ciabatta or sourdough bread
  • 1 garlic clove
  • Extra virgin olive oil
Directions
  • Step 1 Preheat the oven to 200º C. Place Tomato vine on an oven tray and season with salt, pepper and extra virgin olive oil. Slice the garlic too and put the tomato vine & sliced garlic into the oven for 10 minutes.
  • Step 2 In a bowl, mix ricotta and extra virgin olive oil with salt and pepper.
  • Step 3 Take out the tray from the oven and take the sliced roasted garlic and chop it finely, then with the back of your knife crush the garlic before mixing it with the ricotta mixture and add any of the oil from the oven tray.
  • Step 4 Toast your bread on a BBQ, griddle pan or a frying pan (about 1 minute each side).
  • Step 5 Rub each bread with the garlic clove and brush some extra virgin olive oil on each toast with a basting brush.
  • Step 6 Top each bread with the ricotta mixture and place one tomato vine on each toast. Enjoy!
