Fried Calamari is very easy to make and it tastes amazing! It’s a fabulous dish that you can share with your family and friends especially on a warm summer night.

There are a few tips that will take your Calamari to the next level.

 

How do you prevent your Calamari from getting hard and rubbery?

Nobody likes rubbery Calamari. It is important to ensure that your calamari doesn’t end up being hard or rubbery. You can cook calamari either on high heat for a short period of time or on low heat for a long time.

The trick to making your Calamari tender and soft is to cook it quickly in a pan on very high heat.

When you prepare your Calamari tubes it is important that you make sure you pat your tubes completely dry. If the Calamari is too wet it will splatter and spit when hitting the hot oil in the frying pan, and it will only cause unnecessary pain and trauma to you. 

The other tip is to flour the Calamari twice to give it a good coating and cook it immediately. Do not leave the Calamari sitting for an hour or two as it tends to go gluggy and you will not get the crispy texture you are looking for. 

As we mentioned before when adding your Calamari to the pan, it needs to be red hot on high heat. The idea is to toss the Calamari for less than a minute. You are better off cooking the calamari in small batches otherwise it tends to generate moisture when it is too crowded in the pan. The Calamari will then give it moisture which in turn will make it boil. This is not good for your Calamari.

The final tip is to pour the Calamari  onto a paper towel to dry off some of the oil before you toss it in the dressing while the Calamari is still warm.

Now let’s get to the recipe in detail.

 

What ingredients do you need to make Fried Calamari?

2 or 3  Medium Size Calamari Tubes

100 gm Flour

100 ml   Extra Virgin (EV) Olive Oil

1 Lemon Juice & Zest                   

1 Garlic Clove Crushed

 1 tablespoon Sea Salt

1 Tablespoon Cracked Black Pepper

100 gm Rocket (Not shown in the photo)

Instructions to make Fried Calamari

 
Step 1

Take a bowl and add the flour, ½ of the lemon zest, half a tablespoon of Sea Salt & Cracked Black Pepper. This is the mixture you will coat the calamari with.

Place Calamari on a tray with a paper towel and dry Calamari completely.

Cooking tip 1:  It is important to dry your Calamari properly, if it is too wet it will spit when hitting the oil in the frying pan.

 

Step 3

Open up the Calamari Tubes by cutting through the seam of it. Once you have done that, cut pieces into triangular shapes and score with your knife.

Cooking tip: By scoring your Calamari it creates a pineapple effect on the calamari skin making the Calamari curl up when you cook. When the Calamari is curled up it catches the dressing more and makes your dish more tasty.

Step 4

Place a Calamari in a colander over a bowl. Throw in the flour mixture and coat all the pieces thoroughly. Put the pieces in another colander and coat the pieces again. The idea is to coat the Calamari pieces all over without it being gluggy. Once you have coated the Calamari, place on a tray, making sure they don’t touch each other.

Step 5

Put on a fry pan on high heat, then add Extra Virgin Olive Oil. Then add the calamari piece by piece. Don’t overfill the pan as it will create too much liquid which will boil the pieces instead. Cook for about 45 seconds to 1 minutes until the pieces are slightly golden in color. 

Step 6

Take another bowl and add the rest of EV Olive Oil, Lemon Zest, Sea Salt, Cracked Black Pepper and all of the Lemon Juice. Whisk together vigorously. Add the Cooked Calamari and toss thoroughly.

Step 7

On a plate spread all the rocket, then top it with the Calamari. Enjoy it warm and fresh!

  • Step 6 Take another bowl and add the rest of EV Olive Oil, Lemon Zest, Sea Salt, Cracked Black Pepper and all of the Lemon Juice. Whisk together vigorously. Add the Cooked Calamari and toss thoroughly.
  • Step 7 On a plate spread all the rocket, then top it with the Calamari. Enjoy!
