Insalata Caprese

 

Insalata Caprese is a beautiful salad that is simple to make and is full of flavour. It highlights the colors of the Italian flag (red, white and green). This Italian style salad is a perfect party side dish or it can also be served with your normal dinner as a refreshing side. When tomatoes are in season, you can truly taste the fresh magical taste of this dish. In this recipe, we have used small different coloured cherry tomatoes. However, you can use any tomatoes you like, for example Roma tomatoes. You will also need basil pesto for this salad. You can either use store bought pesto or make your own by following the instructions below.

 

How to make basil pesto?

To make your own basil pesto sauce, simply take ¼ cup pine nuts. Toast them in a frying pan for a few minutes. In a food processor add the pine nuts, 2 garlic cloves, 1 ½ basil leaves and ¾ cup of parmesan cheese. With the motor running, gradually add the oil in a thin steady stream until well combined.

 

Ingredients for Insalata Caprese

2 tubs of 250 gm Buffalo Mozzarella 

1 Punnet of medley tomatoes

2 tbsp finely chopped basil 

2 tbsp Basil pesto (bought or homemade)

2 tbsp Extra Virgin (EV) olive oil 

1 tsp sea salt 

½ tsp cracked black pepper

Instructions for Insalata Caprese

Cut the buffalo mozzarella in thin slices (approximately 6 slices per ball) and lay the slices on a plate or platter evenly spread. 

Then, cut the tomatoes in half and arrange them on top of the  cheese slices. 

Finely chop the basil leaves.

Cooking tip: Chop the basil leaves with scissors to preserve the flavor of the basil. It is also super convenient. 

Spread the freshly chopped basil leaves on top. 

Now sprinkle the sea salt, cracked pepper, and top with the EV olive oil mixed with pesto.  The EV olive oil mixed with the pesto creates a runny dressing that spreads across the dish. Enjoy!

  • Step 6 Eat immediately! The fresher the better!
