Lemon meatballs? Meatballs with lemon? As most first timers, that’s how I reacted to hearing about lemon meatballs. We had never heard of lemon meatballs until we decided to look for new recipes with lemons. Italo and I both love squeezing some lemons over BBQ’d meat or use it for seafood or in dessert, but Lemon meatballs…not a chance.

Now that we have tried it, it makes perfect sense and we wonder how could we miss this delicacy until now.

Lemons meatballs recipe calls for some bread as well. In this recipe, we have used two slices of plain white bread as we found that this type of bread soaks up the water very well and is easy to blend in with the minced meat afterward however, you can use any bread of your choice or for your dietary needs. And, we have used mineral water for the mixture as it makes the meatballs airy and fluffy – a handy tip I learnt from my great grandmother.

Another thing to note is not to use too much salt in your mince mixture. As lemons enhance the flavor of the meat, the minced meat mixture does not need too much seasoning. We have used lemon pressed olive oil for this to enhance the lemon flavour. You can either buy it or make some at home using real lemon peels and olive oil. We have also added mushrooms in the end before serving. This is optional. You can use any other vegetables of your choice if you want or enjoy the lemon meatballs as they are! Now let’s get to the recipe.

Ingredients you need for Lemon meatballs

500 gm Pork/veal mince or beef

2 slices White bread

1 Egg yolk

50 gm Grated Parmesan

1 Tablespoon Lemon zest

Juice from ½ lemon

100 ml Mineral water

2 Tablespoons Olive lemon oil

100 ml Flour

Salt and pepper to taste

Mushrooms or any vegetables of your choice (Optional)

Instructions to make Lemon meatballs

 

Step 1

Cut edges of the two slices of bread and place them in a bowl. Pour over the mineral water. Let the bread slices soak up the water for a few minutes.

In a large bowl, prepare your mince mixture by adding the minced meat, egg yolk and the Parmesan cheese.

Step 3

Now squeeze out the excess water from the bread, and add the bread to the mince mixture. Mix thoroughly till it all looks smooth to ensure that the bread will dissolve well with the minced meat.

Step 4

Add salt, pepper and lemon zest to taste. Cooking tip: Be mindful not to use too much salt as the lemon tends to enhance the salt flavor. Mix well.

Step 5

Take a small piece of mince and roll it till it forms a small ball slightly smaller than golf balls. You can do this on a smooth even surface if you wish. Put the rolled meat ball aside and repeat with the rest of the mixture.

On a plate add the flour and roll each meat ball till they are all evenly coated.

Put a large frying pan on heat and add the lemon olive oil. Once it’s heated, add your meatballs in the frying pan. Then, add in the lemon juice in the pan to enrich that lemony flavour. Keep stirring the pan ensuring that you coat all the meatballs evenly. Once the meatballs are evenly coated and turn slightly brownish, take them out and pour over the par cooked meatballs to another pot. This should take about 5 minutes. The goal is to half cook them as we will cook them again.

Step 8

Deglaze the pan you friend the meatballs in using about ½ cup of water. Pour 1/2 cup of water into the pan you fried the meatballs in, and let it cook for a few seconds. Then pour this water into the pot with the par cooked meat balls.

Step 9

Let the pot with the meatballs simmer for a few minutes till they have cooked thoroughly. This should take about 5 minutes.

Step 10

Optional: You can also add veggies of your choice to the meatballs. As you can see, I have added mushrooms to mine. Just take another pan and saute your diced vegetables in butter, and a bit of cream. Once cooked, mix well with the meatballs for that rich thick flavour and enjoy!

Lemon meatballs can be a great addition to pastas! You can pair it up with traditional bolognese sauce.

It is a lovely combination!
