Piccata di Vitello con Limone (Veal with Chili & Lemon)

Piccata di Vitello con Limone is a dish that we love enjoying during summertime. Continuing on our theme of lemons, this dish has three or four key ingredients that add to the flavor and the texture to this dish, and lemon is one of them.  Piccata is an Italian word spelled sometimes as picatta or pichotta. The culinary use of the Italian term means “to be pounded flat”.

As lemon is acidic, it tenderises your meat by breaking down the protein in the meat while giving it that tangy flavour. The chilli gives it a nice kick. This combined with the stock creates a thick rich sauce that leaves a delicious flavor on your tastebuds.

We use Girello for Piccata di Vitello con Limone. It is a cut of veal from the back leg of the animal. You can buy this cut as a whole piece, trim off the sinew, and cut into 1 cm thick slices. The best place to buy this cut of meat is from a continental butcher.

 

 Picatta di Vitello con Limone

What ingredients do you need to make Piccata di Vitello con Limone (Veal with Chili & Lemon)?

 

75 gm  Unsalted Butter, chopped

3 Tablespoons  Extra Virgin Olive Oil

1 kg  Girello (Baby Veal or young Calf)  Trimmed and cut against the grain into 12 slices 3 – 4 mm thick

50 gm Flour – For dusting, season to taste

1/3 cup Beef Stock

2 Teaspoons   Chili Flakes

1 Tablespoon   Flat Leaf Parsley finely chopped

2 Teaspoons  Sea Salt

1 Teaspoon Cracked Black Pepper

2  Lemons (1 for wedges and 1 for juice and zest)

Instructions to make Piccata di Vitello con Limone (Veal with Chili & Lemon)

 

Step 1

Place veal one slice at a time, between sheets of plastic or baking paper, then using the flat side of a meat mallet, pound gently until at an even thickness.

Step 2

On a plate, add flour and half the salt. Dust each Veal slice in flour evenly, shaking away the excess flour.

 

Step 3

Add 25 gm of butter and 1 tablespoon of olive oil in a large nonstick frying pan. Cook one third of the veal over medium heat for 1 minute on each side, then remove from the pan, cover and keep warm. Repeat twice more with remaining butter, oil, and veal.

Step 4

Once all the veal is cooked add stock to the frying pan and simmer until reduced by half, then add lemon juice and lemon zest, the rest of the salt, chili, and parsley and bring to a simmer.

Divide the veal on a platter, then pour the sauce over and serve with lemon wedges. Enjoy your Piccata di Vitello con Limone!
