Pizza Dough

Pizza is one of the most known foods in the world. Let’s learn how to make the best pizza dough. In this post, along with how to make pizza dough, we are also sharing with you our recipe for simple potato pizza, bolognese pizza, fig pizza, and parma pizza.

 

Ingredients you need for pizza dough

 

1 Kg – OO Flour (Strong White Flour)

400 ml – Warm Water

150 ml – Mineral / Soda Water

40 ml – Olive Oil

30 gm – Fresh Yeast or 2 Packets x 7gm Dried Yeast

20 gm – Sea Salt

10 gm – Sugar

 

Instructions

You can make the dough either with your hands or using a mixer. Please follow the recipe depending on how you are going to make the dough.

Step 1: In a bowl, add warm water, yeast and sugar together. Let it sit together in the bowl until there is bubbling foam content at the top.

If you are using a Mixer with Dough Hook

Step 2: In a mixing bowl, add the flour, salt, olive oil, and mineral water. Slowly add the bubbling yeast mixture a bit at a time. Let it mix together for about 5-10 minutes. If the mixture is too dry add more water until it has a soft elastic feel to it. If the mixture is too wet, then add more flour until you get the consistency required.

For those of you mixing by hand, get ready to get messy. 

 

Step 2: Take a large bowl (preferably wooden), add the flour, olive oil, mineral water and sea salt. Make a well in the middle and add the bubbly yeast mixture. Then, with your dough spatula, begin scraping the flour into your water, paying special attention to the sides and bottom. As your dough comes together, get your spare hand into the mix and, starting at the edge of your bowl, fold the dough over itself with the spatula as you use your other hand to squish any dry spots to ensure they get incorporated.

Step 3: When the dough is mixed, put in a bowl preferably a wooden bowl cover with wet T-Towel. 

Step 4: Allowed it to sit for about 1 or 2 Hours or until it has risen twice. Once it has risen re knead the dough and form pizza balls to the size you require for your trays. 

If you have a scale, try these measurements for the pizza dough balls.

22 cm tray – Dough 180 gm 28cm tray – Dough 300 gm

30 cm tray – Dough 400 gm

Step 5: Put each ball on the oiled trays and cover for about 30 minutes.

Step 6: Once dough has risen the second time, use your palm of your hand to flatten and roll out the dough to meet the edges of the tray.

Sauce for pizza

 

Ingredients

400 ml – Tin Diced Tomatoes with Basil/Oregano

400 ml – Tin San Marzano Diced Tomatoes 

3 Tablespoons – Tomato Paste

1 – Medium/Large Onion finely diced

2 Cloves – Garlic Finely Chopped (Or 2 teaspoons of Crushed Garlic)

2 Handfuls – Fresh Basil (Finely Chopped)

1 Tablespoon – Dried Oregano (Adds more flavour than fresh Oregano)

1 to 2 Teaspoons – Sea Salt

1 Teaspoon – Cracked Black Pepper

1 Tablespoon – Sugar (Takes out the acidity of the tomatoes)

2 Tablespoons – Extra Virgin Olive Oil

Step 1: In a pot add the EV Olive Oil and finely diced onions, cook for 2 to 3 minutes then add in the garlic. Cook for a further 3 minutes until the onions are translucent.

Step 2: Add in the Tin Diced Tomatoes, San Marzano Diced tomatoes along with the rest of the ingredients. Let the pot cook slowly for about 30 – 45 minutes. Constantly stirring the sauce every 5 minutes.

Suggested Toppings

 
Potato Pizza 

Par boils potatoes, and then thinly slice tossed in garlic olive oil, rosemary, chilli, salt and pepper, lightly fry in a pan for a few minutes

Finely slice onions & bacon, toss in a pan which has been preheated with butter. Cook until the onions are caramelised.

Top the pizza with sauce, add mozzarella cheese, then layer with potatoes evenly, then add onions & bacon spreading evenly then finely chopped bacon or pancetta.

Bolognese Pizza

Just add sauce, top with mozzarella cheese then add Bolognese. Easy as that!

Fig Pizza

Top pizza with sauce, and then finely crumble gorgonzola cheese evenly over the pizza. Then add either dried or fresh figs which have been chopped into about 24 pieces spread evenly over the top. Once pizza has been cooked add freshly sliced prosciutto about 8 slices depending on the size of the pizza.

Parma Pizza

Top the pizza with sauce, add mozzarella cheese. Once the Pizza has been cooked, add sliced Prosciutto evenly, and then topped with rocket leaves, and then shaved parmesan. Sprinkle Olive oil and cracked pepper over the pizza.
