POTATO AND LEEK SOUP

Technically, it’s autumn but seems like winter is already here in Aus! So we decided to make some potato and leek soup and share our recipe that will help you keep warm this winter. 

Soups are a heavenly way to cozy up your winter and if you choose the right ingredients, you can benefit from all the health benefits of their nutrients. 

 

What are the health benefits of your potato and leek soup? 

Rich with Vitamin A, C and K, Potato and leek soup may boost your immune system, improve heart health, and even eyesight (thanks to leeks). This soup may even improve your mood. It definitely does mine!

Believe it or not, some people also serve potato and leek soup cold. But we love it hot! We love having some hot bread rolls with this soup however, you may like to use it as a starter or have it as a healthy snack in the afternoon.

 

Potato and Leek soup is very simple to make. You can make it in just 4 easy steps. As always, good quality products can make a huge difference from a good soup to a fantastic tasting soup. 

Pick a higher starch potato with yellow skin like a Yukon Gold or if you cannot find this particular variety, just try finding starchy potatoes. Now let’s get to the recipe in detail.

 

Ingredients you need for Potato and Leek soup

2 Large potatoes peeled and diced

1 ½ cup Leek finely chopped

1 Garlic clove finely chopped

500 ml stock of your choice (vegetable, beef or chicken)

1000 ml water

1 Teaspoon Himalayan salt

1 Teaspoon cracked black pepper

1 Teaspoon chilli flakes (or to taste)

Instructions to make Potato and Leek soup

 

Step 1

Peel and dice the potatoes and add them to a bowl. Then, wash and finely chop the leek and add to the same bowl. Lastly peel finely chop the garlic clove and add this to the same bowl.

Step 2

On a stove top put a large sized pot on high heat and add some of the stock, chilli flakes, leek and potatoes. Cook for a few minutes while continuously stirring to avoid anything getting burnt or stuck in the bottom of the pot.

Step 3

Then add the rest of the stock, all the water and the salt and pepper. Cook on low to medium heat for about 30 minutes or until the potatoes are soft. Stir occasionally and top up with more water if you think your soup needs it.

Step 4

Zap your soup in a blender or a Thermomix until your soup is smooth. If you haven’t got either you can also use a masher. This will give your soup a different and more coarse texture. That’s it!

Enjoy this hot potato and leek soup with some soft bread on the side or on its own.
