Sausage Rolls

Sausage rolls is an Aussie classic dish that everyone is bound to love! Who wouldn’t love some fresh oven-baked seasoned sausages in buttery velvety pastry.  I love using pork mince for sausage rolls. You can any meat of your choice. Every time I make sausage rolls, I cook half of it and freeze the rest, so I can enjoy some the next time easily. Now let’s get straight to the recipe now.

Ingredients

500 gm pork mince 

100 gm celery finely chopped 

100 gm leek finely chopped 

150 gm bacon finely chopped

50 gm prosciutto (optional) finely chopped 

25 gm butter

1 garlic clove

100 gm bread crumbs 

2 eggs 

1 tbsp Worcestershire Sauce 

3 tbsp BBQ Sauce 

2 tbsp dried dill or fennel seeds 

Puff pastry sheets

Salt and pepper to taste 

Poppy seeds to garnish

Instructions

First, preheat the oven to 180º C.

Finely chop leek, garlic, and celery, bacon and prosciutto.

Now, heat up a frying pan and add the butter. Cook celery and leek with the garlic for 2 minutes. After 2 minutes add the chopped bacon and prosciutto, and cook for a further 2 minutes stirring continuously. Turn off the stove and let it cool for a minute.

In a bowl, take the pork mince, dill, 1 tbsp Worcestershire sauce, 1 tbsp BBQ sauce, 1 egg, bread crumbs, salt and pepper as well as the bacon mixture and mix it well together. You will need the other egg for egg wash.

Now, take a sheet of puff pastry, cut it in half and put 150 gm of the pork mixture. The sheets work best when they are semi thawed. Remember to make sure that the mixture is evenly spread across the ½ sized puff pastry sheet.

Fold over and seal with egg wash to close the sausage roll.  After you brush the sausage roll with the egg wash and sprinkle with poppy seed.

Steps for sausage rolls

Put them rolls into the oven and cook for about 30 minutes or until golden brown. 

When they are ready, cut them into pieces, enjoy with some tomato sauce!
