Tonight I didn’t have to cook. Yah! My husband cooked a beautiful frittata, made with nine eggs, leek, celery, potatoes, capsicum, chilli, mushrooms, beans, carrots, peas and corn kernels.  It tasted great. It is also a great way to clean out the fridge and eat your vegetables. A win, win, win. The trick is, according to my husband, to saute the vegetables in garlic and olive oil, then let it sit in the egg mixture for a while to soak up the eggs. This will limit the excess water from the vegetables when cooking the frittata.

 Tonight’s dinner topic was fighting. Our niece Bec said that in the six months she has been living with us she has never heard us fight. Our response was that you do not stay married for 30 years and do not fight however, the trick is you can decide when and how you are going to respond to things.
